Since I've never saw a Sheik amiibo in a tourney, I would like to try one out. Any help on training tips, equipment, or stats? Help would be appreciated.

I don't own one myself, so bare with me here.
From what I've heard, Sheik's major issue is killing (I have no idea what AI flaws she has). I'd try a build that uses equipment to boost attack, while also focusing heavily on defense. You could go Overload, but it might not be the best choice. Critical hitter is a must, maybe go with an all around trade off and lifesteal for the last two slots. Theoretically, the trade off will increase her defense, speed, and most importantly, attack the longer she lives, which the lifesteal+critical hit should help with.

If sheik has trouble killing, you can run Explosive perfect shield, and let her kill with that. Saving you 2 more slots for some cool things like Critical hits

The only AI problem I have with Sheik is that she tends to overshoot the ledge with her double jump sometimes when she's trying to recover, but that can be fixed if she has negative speed points.
I think this build has been doing Sheik justice.
---------
90/90/-60
Critical Hit Explosive Power Shield Improved Escapability ---------
Alternatively, you can trade Explosive Power Shield for Mirror Shield, and Critical Hit for Lifesteal.
Reduced Landing Impact is also great if you train an aerial heavy Sheik.

Sheik IMO is too light for lifesteal to even help, and EPS imo is better in every way.

Given Sheik's pretty high and consistent hit rate, though, its not out of the equation to give it a shot.

Yup!
On the side note, since Sheik is mostly going to try and swat opponents away, Auto Heal seems to have potential to work pretty good as well.
