Well...
After a 3-minute timer session consisting of me only killing her with Toad, I had her face against Ganon in a 2-stock. She never used Toad at all.
What I'm guessing is that Toad isn't a worthwhile move for her, so she avoids using it.
Though I have seen mine pull it out once before, but it had no effect.

Mine uses Sleepy Toad, and she uses it very consistently. Default Toad is a bit of a cruddy counter, and maybe the AI realizes that... Also, don't bother focusing on her Down B. She uses it once in a blue moon, and experienced foes often use it against her.

My peach is wired what happened was peach and pikachu were on a team against 3 peaches and 3 pikachu and occasionally a rosalina and luma only on palutena's temple. once it reached around level 40 or so it fought a falcon amiibo up to level 50 and i turned out to be on of the best amiibo i have. It's weird while most people's peaches don't use toad mine can use it to counter almost any move when it has the chance.

Sleepy Toad is probably Peach's best custom, in case you were wondering. It still knocks opponents away in the air, but it puts grounded opponents to sleep. Perfect for free forward smashes!
As far as actual training goes, Peach is pretty solid. The only real thing that holds her back is her overuse of forward air, somewhat short range, and mobility. While she doesn't exactly have any true combos she can learn, she can learn some cool tricks with her Peach Bomber and whatever Turnip shenanigans you want to teach her. Peach is very good at retaining what she's taught in this regard. She also hits like a truck, especially if you load her up on attack points.
Some things I've tried to teach my Peach (Kiwi) are using Peach Bomber while holding one of her Turnips, lots of down tilts crown slaps, and juggling with up air. So far, she only does a couple of those things; but that's pretty much because I haven't given her much attention... Dreadful, I know.
On the side note, I know for a fact that Peach can learn float cancels. While this really only applies to when she uses aerials, I figured its at least worth mentioning. Kiwi really does well with this, but since I know a lot of you guys don't use aerials, you probably shouldn't mess with this.
