I know that eventually an amiibo wants experience fighting every character on the roster, whether that be fighting you or an amiibo
However, I don't have too many of my amiibos trained at all and my overall experiences with most of the characters is lacking
So basically, my question is whether it is better to have an amiibo fight a level 9 CPU, or is it better to have you use the character, even if you're crap with said character?

It can be great for your amiibo to have experience against every character, but it will benefit your amiibo more if you fight it yourself.
I recommend just fighting your amiibo to the best of your abilities. If you are terrible playing as a character, just try spamming said character's gimmick move, if they have one (i.e. Olimar's Pikmin Throw, Bowser's Side-B). As long as your amiibo has some form of experience against an opponent, they'll fight better and smarter.
Hope this helps!

Alright, thanks for the tip. Finished a marathon of fighting my Jigglypuff amiibo, going down the roster in order. Stopped at Samus... gonna be a long ride
